What Will I need To Make Keto Caramel Sauce?

For the keto caramel, you will need:

1 stick unsalted butter

2 tablespoons Swerve brown Sugar Sweetener

1/2 cup allulose

1/2 cup heavy whipping cream

pinch of salt

Can I Use Another Sweetener?

The only other keto-friendly sweetener that we have used to make this recipe with success is Xylitol.

However, we do not use Xylitol in our households because we have pets. Xylitol is deadly to dogs and possibly to other animals even in tiny quantities. We prefer Allulose as it acts the most like sugar.

HOW Do I Make KEto Caramel Sauce?

The process to make keto-friendly caramel sauce is fairly simple!

  1. Melt and brown the butter on low heat for about 5 minutes. (brown not burn!)

  2. Add in your sweeteners and salt and let them dissolve

  3. Add in your heavy whipping cream and turn it to the lowest heat, mix it a little bit just to incorporate, and let simmer for 15 minutes. Keep an eye on it so it doesn't "break"

  4. Pour it into a glass jar with a lid. You can wait to serve until it’s cooled down a bit.

How Long Does Keto Caramel Last?

When refrigerated, keto caramel can last around a week in the fridge. If you see that the caramel has hardened a bit, pop it in the microwave for 10-15 seconds without the lid and it should liquefy again. Remember to stir it a little.

How Many Carbs Are in Keto Caramel Sauce?

I have roughly calculated that 2 tablespoons of this sauce have less than one gram of net carbs. If you look at the nutritional information for a teaspoon of Allulose, it will tell you that it has 0 calories and 4 net carbs. You might be thinking, how is that keto? Well, allulose gets counted as a net carb, but your body does NOT metabolize the carbs in allulose. This is why people are shocked by some of the carb counts found on products that contain allulose in the ingredients list but are often relieved when they learn that they have to subtract the amount from the allulose.

Swerve brown sugar replacement is made with erythritol, which also has zero net carbs. So the only carbs found in this recipe come from the negligible amount found in heavy whipping cream, which has .8 carbs per 2 tablespoons.
