Roasted Cauli Puree
I have been making this recipe for years. I love it. I serve it with roast chicken, with short ribs, or any time we are craving mashed potatoes. This recipe is versatile! Add in cheese, other herbs or even bacon bits!
What you will need:
1 large head of cauliflower, chopped into florets
1 tablespoon of garlic powder
2 ounces of cream cheese
2 ounces of bone broth or stock
2 tablespoons sour cream
salt and pepper to taste
Directions:
Roasted Cauliflower:
Toss the cauliflower florets in olive oil, salt and pepper. Roast the cauliflower florets in the oven at 450 degrees for about 30 minutes until golden brown and tender.
Make the puree:
While the roasted florets are still warm, carefully put them into a blender or food processor.
Add in the stock or broth, sour cream, cream cheese, garlic powder.
Blend until completely smooth, it might take a couple minutes. Adjust to taste!
Other things you could include: Herbs like rosemary, parmesan cheese or other types of cheese, etc,.
