keto Cheez-it Tostada
We made a giant cheez-it and made it into a TOSTADA! (yes its keto!)
What you will need:
For the Tostada
7 oz shredded sharp cheddar
1 oz shredded Emmentaler cheese
1 cup almond flour
2 tbsp nutritional yeast
½ tsp xanthan gum
½ tsp paprika
2-3 tbsp ice water
For toppings: Ground beef with taco seasoning, shredded chicken, tomato, onion, cilantro, sour cream, Tajin, Lime juice, more cheese, the list goes on!
Directions:
Mix all the dry ingredients in a bowl first, make sure to distribute the spices and xanthan gum so it’s well distributed
Shred all of your cheese, put your cheese in the freezer for 10 minutes to make it easier to shred.
Add your cheese and dry ingredients into a food processor (or a blender)
Add in ice cold water a tablespoon at a time until the mixture reaches a crumbly texture that you could form into a dough. We used 3 tablespoons.
Roll it out between two pieces of parchment paper. 1/4 inch thick.
Bake at 350 for 15 minutes
Makes about 8 giant cheez its!
We estimate it has about 5 net carbs per cheez it. Toppings will vary and be additional carbs
