keto Cheez-it Tostada

We made a giant cheez-it and made it into a TOSTADA! (yes its keto!)

This mushroom and leek dish is perfect for a chilly fall evening!

What you will need:

For the Tostada

  • 7 oz shredded sharp cheddar

  • 1 oz shredded Emmentaler cheese

  • 1 cup almond flour

  • 2 tbsp nutritional yeast

  • ½ tsp xanthan gum

  • ½ tsp paprika

  • 2-3 tbsp ice water


    For toppings: Ground beef with taco seasoning, shredded chicken, tomato, onion, cilantro, sour cream, Tajin, Lime juice, more cheese, the list goes on!

Directions:

  • Mix all the dry ingredients in a bowl first, make sure to distribute the spices and xanthan gum so it’s well distributed

  • Shred all of your cheese, put your cheese in the freezer for 10 minutes to make it easier to shred.

  • Add your cheese and dry ingredients into a food processor (or a blender)

  • Add in ice cold water a tablespoon at a time until the mixture reaches a crumbly texture that you could form into a dough. We used 3 tablespoons.

  • Roll it out between two pieces of parchment paper. 1/4 inch thick.

  • Bake at 350 for 15 minutes

  • Makes about 8 giant cheez its!

  • We estimate it has about 5 net carbs per cheez it. Toppings will vary and be additional carbs
