Keto Faux Apple Fritter or Crumble

Ingredients:

You will need:

  • 3 chayote squash (diced)

  • 1 teaspoon cinnamon – https://amzn.to/3aqz0CE

  • 2 tablespoons lemon juice

  • 2 teaspoons cream of tartar – https://amzn.to/2JfUEgZ

  • 1 1/2 cup water

  • 3 tablespoons butter

  • 1/2 cup erythritol – https://amzn.to/3ahZpCE

  • 1/4 teaspoon xanthan gum – https://amzn.to/2UezpTm


    If you want to make fritters:

  • 2 eggs for egg wash

    If you want to make apple crumbles you will need:

  • 1 cup almond flour- https://amzn.to/2JbE4iw

  • 3 tablespoons cold cubed butter

  • 1 teaspoon vanilla extract- https://amzn.to/2vJTLud

  • 1/4 cup erythritol – https://amzn.to/3ahZpCE

    Method: Add water to a pan, add butter, cinnamon, nutmeg, lemon juice cream of tartar on medium heat. Add xantham gum to the erythritol and blend them together to make sure the xantham gum evenly disperses into the pan. Add to pan and quickly stir them together to combine. Add in the diced chayote and simmer for at least 20 minutes until chayote is tender (cook longer if you plan on making the fritters, because if you are making the crumble the mixture will bake twice)

    If making the fritter: Heat up about an inch of oil on medium heat. Cut the cutdacarb into two strips the long way Brush liberally with egg wash. Add about a tablespoon of the cooled apple pie filling into one side corner. Lift the corner and meet the other side and continue to fold upwards until the wonton is formed. It will look like a triangle. All the sides should be closed! Fry until golden (less than one minute per side, drain on paper towel)
    If you want to make the crumble: Preheat oven to 350 degrees. Add the almond flour, cold butter, vanilla and sweetener to a bowl and mix together (by hand or food processor)Fill ramekins or a baking dish with the faux apple pie filling and crumble the almond flour mixture on top. Bake the crumble for 10 minutes until bubbly and golden
