Keto Mushroom Ravioli

We tried to re create one of our favs from Olive Garden

Ravioli with a Mushroom Thyme filling with a sundried tomato sauce

filling -Makes 10 ravioli

  • 1 tablespoon olive oil

  • 1/2 pound chopped portobello mushrooms

  • 1 minced shallot

  • 1 sprig of thyme

  • 1 teaspoon garlic powder (or you can use 2 cloves fresh garlic)

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 2 heaping tablespoons of parmesan

  • 2 heaping tablespoons of ricotta cheese

sauce

3 tablespoons butter

1 teaspoon garlic powder

2 tablespoons sundried tomato paste

3/4 cup heavy cream

1/4 cup water

2 Tablespoons Parmesan cheese

1/4 cup shredded mozzarella cheese

1 teaspoon salt

1 teaspoon black pepper

  • Sargento sliced provolone (not the thin kind)

Directions:

  • Cook your chopped mushrooms, in olive oil, add a sprig of thyme, salt, pepper, and garlic powder. Cook until everything is soft and then let it cool down a bit.

  • In the food processor add your mushroom mixture, add in parmesan and ricotta, and process until it looks fully combined. Put it off to the side.

  • Preheat your oven to 350 degrees. Lay out your provolone slices on parchment paper. Add about a teaspoon to one side of the provolone circle so you can close them.

  • Put them in the oven for about 1.5 minutes until the cheese looks glossy, be careful not to melt them too much or burn them.

  • Pull them out of the oven and be careful while closing the “ravioli”. Press down the chesse to close them. If they become too hard, put them back in the oven for a bit to melt them again.

  • For the sauce: Add in your sundried tomato paste, add in your spices, simmer, and add in your heavy cream, water, and cheeses and cook on low until thickened.

  • Note, your sauce will be warm for this recipe, the ravioli must be room temperature or they will melt into a blob. This is always the case for this ravioli hack.

  • Carb count: For 4 ravioli and sauce we estimate that this dish has 5 carbs.
