Copycat Chipotle Quesadilla HAck

This quesadilla is amazing with the honey vinaigrette!

filling /Tortilla

  • 2 green peppers, sliced

  • 1 red onion, sliced

  • salt, pepper, oregano to taste

  • shredded cheese, we used Monterrey jack

  • Protein of your choice

  • low carb tortilla of your choice

keto honey vinaigrette.

To make: Blend together ingredients, then stream in the oil to emulsify.

  • 6 tablespoons red wine vinegar

  • 3 tablespoons honey substitute

  • ½ cup water

  • 1 teaspoon dried oregano

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 2-3 chilies in adobo (use three if you like it spicy)

  • 1 cup oil (we used avocado, use what you want!

    CARB INFO:

    Chipotle vinaigrette - 18 grams of carbs per serving

    Our vinaigrette - <1 gram of carbs

    Chilies in adobo have 1.5 carbs each pepper = 4.5 carbs

    Honey substitute has 1 net carb per serving X 3= 3 net carbs

    Sugar alcohols are counted in the carb count but can not be digested so they DON’T COUNT.

    Garlic powder has 2 net carbs per teaspoon 

    TOTAL: about 10 net carbs for a mason jar full of this vinaigrette.

  • Sauce: <1 carb

    Tortilla: 4 grams net carb

    peppers: 2 net carbs

    cheese: 1 net carb
