White Chocolate Rasberry Mousse Pie
Inspired by a non-keto recipe that I happened across last week I decided to make a keto-friendly version of this mousse dessert! This has raspberries, white chocolate and lots of heavy cream! We used a basic almond flour crust, we got the recipe from Wholesome Yum which you can see here! (we used allulose as our sweetener of choice in this recipe!)
What Do I Need To Make The Mousse
You will need: (for the filling)
1 3/4 cup Lily’s White Chocolate Chips
1 1/2 cup defrosted frozen raspberries (or fresh)
1 tablespoon lemon juice
1 packet unflavored gelatin powder
3 cups heavy whipping cream divided
3/4 cup powdered allulose

White Chocolate Raspberry Mousse
Ingredients
- 1 + 3/4 cup
- Lily's White Chocolate Chips
- 1 1/2 cup defrosted frozen raspberries (or fresh)
- 1 tablespoon lemon juice
- 1 packet unflavored gelatin powder
- 3 cups heavy whip divided
- 3/4 cup powdered allulose
Instructions
- Blend the raspberries in a blender (or food processor) until smooth.
- Add in your lemon juice
- Sprinkle the unflavored gelatin powder on the top of the raspberry puree and let it bloom for 10 minutes
- Heat 1 cup of heavy cream to a simmer
- Pour it over your white chocolate chips and stir them to combine
- Stir in your raspberry puree
- Put it in the refrigerator while you whip your heavy cream
- In a large bowl whip 2 cups of heavy cream and your powdered allulose until stiff peaks form
- Fold in the raspberry mousse base into the heavy cream gently until well combined, but don't overdo it!
- Either put the mixture into your pre-made pie crust or portion out into individual servings.
- Let set in the fridge for at least 4 hours or overnight (cover it!)
