Spanish Cauliflower rice
This delicious keto friendly Spanish inspired cauliflower rice dish is packed full of flavor and the perfect side for tacos, chicken or fish! We use the dry cook method to make sure we get out all of that cauliflower flavor. Once cooked thoroughly, you start adding back in that moisture and flavor with a rich spice slurry!

Spanish Cauliflower Rice

Ingredients
- 1 16 oz bag frozen cauliflower
- 1 small onion diced
- 1 green onion
Spice Slurry
- 1.5 tablespoonsBetter Than Bullion Chicken Stock Base
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 2 tablespoons butter or olive oil
- 1/2 cup water
- 1 teaspoon of cumin
- salt & pepper to taste
Instructions
Method
- Microwave frozen cauliflower rice for 6 minutes on high
- Mix together your slurry of spices and set aside.
- Add cauliflower rice to a dry pan on low-medium heat. Cook until completely dry. (5+ mins)
- Add in oil or butter, onions and cook for a couple minutes until onions are translucent.
- Add spice slurry and cook until most of the liquid has cooked off.
- Top with garnish, like green onion or cilantro.
